Year 11 Fish Filleting Workshop
Stephen Muir from the London Caviar Company came in to St Mary’s on Wednesday to run a fish filleting workshop with our GCSE Food Preparation and Nutrition students, in preparation for their upcoming practical exams.
We were all so impressed with the girls’ filleting skills; they all took their time, were confident and supportive of each other leading to great results. It was a pleasure to see the Year 11 students making exceptional progress over the session, starting by being a little squeamish and wearing gloves, then by the end of the session the gloves were off! Squid tentacles were being plaited, fish eyes wobbled and guts galore. This is a complex GCSE practical skill that the students can use in their practical exams. Stephen runs a stall at Peterley Manor Farm in Prestwood every Saturday and has offered our Year 11 students a special discount on fish for their practical work. He also spoke to the students about his 40 year career as a Chef and his stint in care homes. Well done Year 11, superb progress!
